Lemony Carrots

Ingredients

  • 2 Tbsp. lemon juice
  • 2 Tbsp. honey
  • 1/2 c. water
  • 2 c. sliced carrots
  • 2 Tbsp. melted butter
  • 2 Tbsp. minced fresh mint

Instructions

  1. Combine lemon juice, honey and water in a saucepan.
  2. Add carrots and bring to boil.
  3. Cover and simmer until tender.
  4. Drain carrots.
  5. Dot with butter.
  6. Sprinkle with mint.
  7. Yield: 4 servings.
