Light Lime Broiled Chicken

Ingredients

  • 1/2 c. lime juice
  • 1 onion, quartered
  • 1/2 tsp. dried basil leaves
  • 4 chicken breast halves, skinned
  • 1 clove garlic, crushed
  • lettuce leaves
  • lime slices for garnish

Instructions

  1. Combine lime juice, garlic, onion and basil in a small dish. Pour over chicken breasts.
  2. Cover and marinate 30 to 60 minutes. Turn chicken over once.
  3. Place chicken on rack in broiler pan (reserve marinade).
  4. Broil 5 to 6 inches from heat source for 15 minutes.
  5. Baste twice with marinade.
  6. Turn chicken and repeat. Chicken is done when it is brown and juices run clear when meat is pierced.
  7. Can use grill in place of oven.
  8. Contains 142 calories per serving, 3 grams of fat and 73 mg. cholesterol.
