Light Peach Shortcake

- Preheat oven to 375°.
- Grease 9-inch square baking pan.
- In medium bowl, combine 2 tablespoons sugar, peaches and lemon juice; set aside.
- In another medium bowl, stir together baking mix, remaining 4 tablespoons sugar, milk and margarine until blended. Pour batter into 9-inch square baking pan.
- Bake 15 to 20 minutes. Cool cake on wire rack.
- To serve, cut cake into squares; top each with 1/4 cup peach mixture.
- Makes 8 servings (240 calories and 9 g fat per serving).
