Light Peach Shortcake

Ingredients

  • 6 Tbsp. sugar, divided
  • 2 c. peeled, sliced peaches
  • 1 tsp. lemon juice
  • 2 1/3 c. buttermilk baking mix
  • 1/2 c. skim milk
  • 4 Tbsp. melted low calorie margarine

Instructions

  1. Preheat oven to 375°.
  2. Grease 9-inch square baking pan.
  3. In medium bowl, combine 2 tablespoons sugar, peaches and lemon juice; set aside.
  4. In another medium bowl, stir together baking mix, remaining 4 tablespoons sugar, milk and margarine until blended. Pour batter into 9-inch square baking pan.
  5. Bake 15 to 20 minutes. Cool cake on wire rack.
  6. To serve, cut cake into squares; top each with 1/4 cup peach mixture.
  7. Makes 8 servings (240 calories and 9 g fat per serving).
