Lime Sticks

Ingredients

  • yellow cucumbers or large green ones (the larger, the better)
  • 2 c. lime
  • 2 qt. vinegar
  • 1 Tbsp. pickling spice
  • green food coloring
  • 2 gal. water
  • 4 1/2 lb. sugar
  • 1 tsp. turmeric

Instructions

  1. Peel cucumbers; slice and seed them.
  2. Use 7 1/2 pounds cucumber sticks.
  3. Mix lime and water; pour over cucumbers.
  4. Let stand cold for 24 hours.
  5. Rinse 3 different times.
  6. Cool waters; let stand in ice for 3 hours.
  7. Pour off; drain real good.
  8. Mix vinegar, sugar and pickling spice.
  9. Heat until dissolved.
  10. Let get cold; pour over pickles.
  11. Let stand cold 12 hours.
  12. Put on stove; boil hard for 30 minutes.
  13. While cooking, add turmeric and food coloring.
  14. Pack tight in jars and seal.
  15. Makes 10 pints.
