Ingredients

  • 7 lb cucumbers
  • 2 gal water
  • 2 c household lime
  • 3 pt vinegar
  • 1 tsp mixed pickling spice
  • 4.5 lb sugar
  • 1 tsp mustard seed

Instructions

  1. Slice cucumbers 1/4-inch thick.
  2. Cover with water and household lime; let stand 24 hours.
  3. Rinse well and let stand in clear water for 3 hours.
  4. Drain well.
  5. Mix remaining ingredients including vinegar, pickling spice, sugar, and mustard seed.
  6. Pour the cold solution over the pickles.
  7. Let stand overnight.
  8. Simmer for 30 minutes, then put in jars and seal.
