Lo-Cal Chocolate Pudding

Ingredients

  • 1/3 c. cocoa
  • 1/4 c. sugar replacement
  • 2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 2 c. skim milk
  • 1 beaten egg
  • 1 tsp. vanilla
  • 1 Tbsp. oleo

Instructions

  1. Combine cocoa, sugar replacement, cornstarch and salt in saucepan.
  2. Stir in milk.
  3. Cook and stir over medium heat until thick and bubbly.
  4. Reduce heat and cook 4 minutes more.
  5. Remove from heat.
  6. Stir small amount into egg, then pour back into cocoa mixture.
  7. Stir to blend and cook 2 minutes.
  8. Remove from heat. Add vanilla and oleo; cool.
