Ingredients

  • 1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
  • 5 slices bacon, cut in 1 inch pieces
  • 1/2 red pepper, diced
  • 1 cup frozen sweet corn
  • 1/2 bunch green onion, sliced

Instructions

  1. Render bacon in pan until bacon is done, remove bacon bits. remove 4 tlbs of bacon fat to med non-stick pot.
  2. Add red pepper, sweet corn, Saute for 5 to 7 mins or until corn is done.
  3. Heat Mash potato in micro-wave,)according to package) add to red pepper and corn mixture fold in green onion and bacon bits, sea salt and pepper To Taste (seasoning).
  4. Serve.
