Ingredients

  • 1 box Duncan Hines cake mix with butter
  • 1 cup sugar
  • 8 oz. sour cream
  • 36 oz. frozen coconut, thawed

Instructions

  1. Prepare cake mix according to directions, making two 9-inch layers.
  2. When completely cool, split both layers horizontally.
  3. Combine sugar, sour cream, and coconut; blend well and chill.
  4. Reserve one cup of this mixture for frosting and spread the remainder between the cake layers.
  5. Combine the reserved sour cream mixture with Cool Whip and blend until smooth.
  6. Spread the whipped mixture on top and sides of the cake.
  7. Seal the cake in an airtight container and refrigerate.
  8. Let the cake sit at least 3 days before serving for best flavor.
