Ingredients

  • 1 1/3 cups condensed milk
  • 1/2 cup lemon juice
  • grated rind of 1 lemon
  • 2 eggs
  • 2 tablespoons sugar
  • baked pie shell

Instructions

  1. Mix together the condensed milk, lemon juice, grated lemon rind, and eggs until well combined.
  2. Pour the filling into a baked pie shell.
  3. Beat egg whites until soft peaks form.
  4. Gradually add sugar to the egg whites and continue beating until stiff peaks form.
  5. Spread or pipe the meringue over the lemon filling.
  6. Bake the pie until the meringue is golden brown, if desired, or chill before serving.
