Ingredients

  • 2 lb chicken or lamb
  • 1 lb rice
  • 2 large eggplant
  • 1 head cauliflower
  • a few potatoes, sliced thin
  • salt and pepper to taste
  • 1/2 tsp bahar

Instructions

  1. Soak the rice for 1 hour in warm water.
  2. Cook the meat in water.
  3. Remove the meat and add a little butter or margarine to the water.
  4. Combine the leftover water with the soaked rice.
  5. Fry the eggplant and cauliflower in cooking oil.
  6. In a large pot, layer the meat at the bottom, followed by the fried eggplant and cauliflower, then the rice and meat water on top.
  7. Cover the pot and bring to a boil until the water begins to dry, about 15 to 20 minutes.
  8. Reduce the heat to low until all the water is absorbed.
  9. Turn off the heat and let it sit for 20 to 30 minutes.
  10. Invert onto a platter to serve.
  11. Serve with yogurt or salad.
