Mandarin Souffle

Ingredients

  • 1 (11 oz.) can mandarins, drained
  • 4 to 5 eggs, separated
  • 3 Tbsp. margarine
  • 1/4 to 1/2 tsp. grated mandarin peel
  • 1 Tbsp. Mandarin Napoleon or Grand Marnier liqueur
  • 2 to 3 Tbsp. sugar
  • 1/4 c. sugar

Instructions

  1. Put mandarins in blender and process until smooth.
  2. Add enough sugar to sweeten.
  3. Whip egg whites until stiff.
  4. Gradually add 1/4 cup sugar, continue beating until whites form soft peaks.
  5. Melt the margarine in a saucepan, stir in the flour.
  6. Blend mandarins into the margarine and flour.
  7. Cook until thickened, stirring constantly.
  8. Remove from heat, add the egg yolks, grated mandarin peel and liqueur.
  9. Carefully fold the whites into the souffle.
