Ingredients

  • 1 cup mashed potatoes
  • 1 package yeast
  • 1 1/2 cups warm water
  • 2/3 cup sugar
  • 1 1/2 Tbsp salt
  • 2/3 cup shortening
  • 2 eggs
  • 1 cup lukewarm water

Instructions

  1. Prepare mashed potatoes and allow them to cool.
  2. Dissolve yeast in 1 cup of lukewarm water and set aside.
  3. In a large bowl, combine 1 1/2 cups warm water, 2/3 cup shortening, 2 eggs, 2/3 cup sugar, 1 1/2 Tbsp salt, and the yeast mixture; mix well.
  4. Add 1 cup flour gradually and knead for 5 minutes on a floured board until smooth.
  5. Refrigerate the dough for 8 hours.
  6. Roll out the dough and let it rise for 3 to 4 hours in a warm, dry place.
  7. Preheat the oven to 400°F (200°C).
  8. Bake the rolls for 10 to 12 minutes or until golden brown.
