- Prepare mashed potatoes and allow them to cool.
- Dissolve yeast in 1 cup of lukewarm water and set aside.
- In a large bowl, combine 1 1/2 cups warm water, 2/3 cup shortening, 2 eggs, 2/3 cup sugar, 1 1/2 Tbsp salt, and the yeast mixture; mix well.
- Add 1 cup flour gradually and knead for 5 minutes on a floured board until smooth.
- Refrigerate the dough for 8 hours.
- Roll out the dough and let it rise for 3 to 4 hours in a warm, dry place.
- Preheat the oven to 400°F (200°C).
- Bake the rolls for 10 to 12 minutes or until golden brown.
