Ingredients

  • 6 large, ripe cucumbers
  • 3/4 c. lime (for pickling)
  • 1 gal. water
  • 1 qt. white vinegar
  • 2 lb. sugar
  • 1 Tbsp. salt (coarse or kosher)
  • 1 1/2 Tbsp. pickling spices

Instructions

  1. Peel and cut cucumbers in 1/2-inch strips.
  2. Soak 8 hours or overnight in a large pot (not aluminum) with the lime and water, then rinse with cold water; let stand 15 minutes.
