Roasted Garlic Toasts

Ingredients

  • 1 head garlic, cloves separated but not peeled
  • 1 tablespoon olive oil
  • Salt and freshly ground pepper
  • 2 1/3-inch-thick 5 x 3-inch French bread slices
  • Olive oil

Instructions

  1. Preheat oven to 350F.
  2. Toss garlic with 1 tablespoon oil, salt and pepper in small baking dish.
  3. Roast until soft, about 30 minutes.
  4. Release garlic from peels into small bowl.
  5. Mash with fork.
  6. Preheat broiler.
  7. Toast 1 side of bread under broiler.
  8. Brush second side with oil.
  9. Sprinkle with rosemary, salt and pepper.
  10. Broil until golden brown.
  11. Spread with garlic.
  12. Serve hot.
