Ingredients

  • 10 medium cucumbers
  • 5 c. sugar
  • 5 tsp. pickling salt
  • 4 c. apple cider vinegar
  • 2 Tbsp. mixed pickling spice
  • boiling water

Instructions

  1. Wash cucumbers.
  2. Place in a large bowl.
  3. Cover with boiling water.
  4. Cover.
  5. Repeat this process every day for 3 days.
  6. Let stand on the fourth day.
  7. On the fifth day, slice cucumbers and put back in bowl.
  8. Combine sugar, spices, salt and vinegar. Bring to a boil.
  9. Pour over sliced cucumbers.
  10. Let stand 2 days.
  11. Drain off liquid.
  12. Bring liquid mixture to a boil.
  13. Pour over pickles which have been put in sterilized jars.
  14. Place on sterilized lids and seal.
  15. Makes 6 half pint jars.
