Ingredients

  • 4 egg whites
  • pinch of salt
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla
  • 1 cup sugar

Instructions

  1. Beat egg whites until foamy.
  2. Add cream of tartar, salt, and vanilla; continue beating until stiff and dry.
  3. Gradually add sugar and beat until sugar has dissolved.
  4. On an oiled baking sheet, spoon mixture into a 9-inch round.
  5. With a spoon, push sides up around the circle so sides are at least 1 inch high, creating a shell.
  6. Bake at 275°F until almost tinted, about 30 minutes.
  7. Turn off heat and leave in oven for 10 to 15 minutes.
  8. Cool slightly before removing from pan.
  9. Fill with prepared lemon, chocolate, or butterscotch pie filling.
