- Beat egg whites until foamy.
- Add cream of tartar, salt, and vanilla; continue beating until stiff and dry.
- Gradually add sugar and beat until sugar has dissolved.
- On an oiled baking sheet, spoon mixture into a 9-inch round.
- With a spoon, push sides up around the circle so sides are at least 1 inch high, creating a shell.
- Bake at 275°F until almost tinted, about 30 minutes.
- Turn off heat and leave in oven for 10 to 15 minutes.
- Cool slightly before removing from pan.
- Fill with prepared lemon, chocolate, or butterscotch pie filling.
