Microwave Pepper Jelly
Ingredients
Instructions
- Grind peppers in food processor.
- Mix in with sugar and vinegar in an 8-cup measure.
- Microwave on High until mixture boils (about 10 to 12 minutes).
- Stir.
- Microwave on 2/3 power (or Medium) for 5 minutes.
- Remove and let stand 5 minutes.
- Add Certo.
- Microwave on High until mixture comes to a boil (about 5 minutes).
- Remove and add enough green food coloring to make a pretty green.
- Pour in sterilized jelly jars.
- Seal with lids and rings or paraffin.
- Cool completely before storing.
- Makes 6 to 8 jelly jars.
