Microwave Pepper Jelly

Ingredients

  • 1/2 c. jalapeno peppers with seed
  • 1 c. bell peppers (green), seeded
  • 2 1/4 c. white vinegar
  • 9 1/2 c. white sugar
  • 1 (2 pouches) box Certo
  • green food coloring

Instructions

  1. Grind peppers in food processor.
  2. Mix in with sugar and vinegar in an 8-cup measure.
  3. Microwave on High until mixture boils (about 10 to 12 minutes).
  4. Stir.
  5. Microwave on 2/3 power (or Medium) for 5 minutes.
  6. Remove and let stand 5 minutes.
  7. Add Certo.
  8. Microwave on High until mixture comes to a boil (about 5 minutes).
  9. Remove and add enough green food coloring to make a pretty green.
  10. Pour in sterilized jelly jars.
  11. Seal with lids and rings or paraffin.
  12. Cool completely before storing.
  13. Makes 6 to 8 jelly jars.
