Microwave Pumpkin Cake

Ingredients

  • 1 yellow cake mix
  • 1/2 c. vegetable oil
  • 1 c. pumpkin (canned or prepared fresh)
  • 3/4 c. sugar
  • 4 eggs
  • 1 tsp. cinnamon
  • 1/8 tsp. nutmeg

Instructions

  1. Very lightly spray vegetable oil coating on bottom of microwave Bundt pan.
  2. Blend all ingredients by hand and pour into Bundt pan.
  3. Microwave 9 to 11 minutes on High.
  4. Rotate pan halfway through cooking time or as needed.
  5. Let stand 10 minutes before turning onto serving platter.
  6. Note:
  7. To promote even cooking, place Bundt pan on top of inverted glass pie plate on microwave floor.
  8. When done, cake should begin to pull away from sides of pan.
  9. If moist spots are noticed, blot with paper towel.
