Microwave Roasted Potatoes

Ingredients

  • 8 to 10 quartered potatoes
  • 1 (8 oz.) cup sour cream
  • salt
  • pepper
  • 1 stick margarine

Instructions

  1. Peel,
  2. wash
  3. and
  4. quarter potatoes.
  5. Place in two quart casserole dish, with 1/2 cup water.
  6. Cover with lid; microwave on High for 9 minutes.
  7. Gently stir potatoes. Microwave for 9 more minutes.
  8. Drain water.
  9. Melt butter over potatoes. Salt and pepper.
