Ingredients

  • 4 c. milk
  • 6 Tbsp. tapioca
  • pinch of salt
  • 3/4 c. sugar
  • 2 eggs
  • 1 tsp. vanilla

Instructions

  1. Beat the eggs with 1/3 cup of milk until well combined.
  2. Add the egg mixture to the remaining milk, tapioca, salt, and sugar, and bring to a boil while stirring constantly.
  3. Cook for 8 to 10 minutes until the mixture thickens.
  4. Remove from heat and stir in the vanilla extract.
  5. Add pineapple pieces to the tapioca mixture before serving.
