Ingredients

  • 3 (8 oz.) pkg. Philadelphia cream cheese
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 large box vanilla wafers
  • 1 can cherry pie filling

Instructions

  1. Beat the Philadelphia cream cheese, sugar, eggs, and vanilla until smooth.
  2. Place a vanilla wafer in each cupcake liner.
  3. Fill each liner halfway with the cheese mixture.
  4. Bake at 350°F for 15 minutes and then cool.
  5. Top each mini cheesecake with a cherry and some juice from the pie filling.
