Ingredients

  • 1 c. sugar
  • 2 2/3 c. water
  • 1/3 c. lemon juice
  • 1/3 c. mint syrup

Instructions

  1. Add 1 cup of sugar to the water and bring to a boil; cook for 5 minutes and then cool.
  2. Add the lemon juice and mint syrup to the cooled mixture.
  3. Pour the mixture into a freezer-safe container and freeze until solid.
  4. Remove from the freezer, put in a bowl, and beat until smooth.
  5. Stir in 2 stiffly beaten egg whites.
  6. Return to the freezer and freeze until firm before serving.
