Minted Honeydew Limeade

Ingredients

  • 3 -pound honeydew melon
  • 1 1/2 cups superfine sugar
  • 1 3/4 cups fresh lime juice
  • 3 tablespoons chopped fresh mint leaves
  • 3 cups cold water
  • 1 cup cold ice cubes

Instructions

  1. Remove rind from melon, discarding it, and cut enough fruit into 1-inch pieces to measure 6 cups.
  2. In a blender puree melon in batches with sugar, lime juice, and mint until completely smooth and pour into a thermos or other container with water and ice.
  3. Shake or stir limeade before serving.
