Ingredients

  • 3 strips bacon
  • 16 oz. can stewed tomatoes
  • 1 to 1 1/4 cups rice

Instructions

  1. Fry the bacon until crispy and remove from the pan.
  2. Add the stewed tomatoes to the bacon drippings and cook briefly.
  3. Add the rice to the tomato mixture and stir well.
  4. Reduce heat, cover, and simmer for approximately 30 minutes or until the rice is tender.
  5. Crumble the fried bacon and sprinkle on top of the rice before serving.
