Ingredients

  • 2/3 c. sugar
  • 1/2 c. lukewarm water
  • 1 tsp. salt
  • 1 c. scalded milk
  • 5 or 6 c. flour
  • 1 yeast cake
  • 2/3 c. shortening
  • 1 c. mashed potatoes
  • 2 eggs, well beaten

Instructions

  1. Combine milk, potatoes, shortening, sugar and salt in a large mixing bowl.
  2. Let stand until lukewarm.
  3. Add yeast, softened in water.
  4. Add eggs.
  5. Beat in 1 1/2 cups flour, then add the balance to make a stiff dough.
  6. Turn out on a board and knead thoroughly. Return to greased bowl and butter top, then let rise 2 hours. Chill in refrigerator, but remove 1 1/2 hours before serving time. Roll dough 1/2 inch thick and cut into 2-inch diamonds.
  7. Dip each diamond in melted butter and arrange alternately in layers around a well-buttered mold.
  8. Let rise until double in bulk, then bake at 400° for about 20 minutes.
