Ingredients

  • 1 2/3 c. flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/8 tsp. cinnamon
  • 1/3 c. vegetable shortening
  • 3/4 c. milk
  • 1 egg

Instructions

  1. In mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
  2. With fork, cut shortening to form fine particles. Add milk and eggs.
  3. Mix just until evenly blended.
  4. Spread batter evenly into muffin pan and put any kind of jam on top (1 teaspoon).
  5. Bake at 400° for 25 minutes.
  6. Makes 12 muffins.
