Nutritious Spinach Cheesecake

Ingredients

  • 400 grams Cream cheese (softened)
  • 3 Eggs
  • 120 grams Sugar
  • 2 tsp Lemon juice
  • 1 bunch Spinach

Instructions

  1. Grease the cake pan with unsalted butter and line the bottom and sides with parchment paper.
  2. Preheat the oven to 200C.
  3. Put the spinach in a plastic bag and microwave (600 W for about 2 minutes).
  4. Once heated, drain.
  5. Squeeze out the moisture and chop the spinach.
  6. Run through a food processor or blender until smooth and forms a paste.
  7. During Step 3, if there does not seem to be enough moisture, add an egg.
  8. Add the remaining ingredients and blend until creamy.
  9. Pour into the cake pan.
  10. Reduce the temperature of the oven from 200C to 190C and bake for 30 minutes.
  11. Rotate the cooking pan and bake at 180C for another 30 minutes.
  12. It is done when the top springs back after you lightly press down on the top with the palm of your hand.
  13. Let cool on a rack in the pan.
  14. Run a knife around the edge to separate the cake from the parchment paper.
  15. Cover with a paper towel and let sit until completely cool.
  16. Once completely cooled, let sit in the refrigerator overnight.
