Ingredients

  • 1 pkg dry yeast
  • 1 cup very warm water
  • 1 tablespoon shortening
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup tomato juice
  • 4 cups flour
  • melted butter

Instructions

  1. Dissolve yeast in very warm water and set aside.
  2. Cream shortening, sugar, and salt until smooth.
  3. Add tomato juice and mix well.
  4. Cool to lukewarm.
  5. Add the yeast mixture and stir well.
  6. Gradually add half of the flour, beating well.
  7. Add the remaining flour and mix well.
  8. Turn dough out onto a lightly floured board and knead for 5 minutes.
  9. Place the dough into a greased bowl.
  10. Cover with a clean cloth and let rise in a warm place for 2 hours.
  11. Turn the dough out onto a lightly floured board.
  12. Shape into 1 large or 2 small loaves.
  13. Place in greased loaf pans and brush the tops with melted butter.
  14. Cover and let rise until doubled in size.
  15. Bake at 400°F for 15 minutes, then lower temperature to 375°F and bake for an additional 45 minutes.
