Ingredients

  • 5 lb. firm ripe tomatoes
  • 8 cups sugar
  • 1 orange, sliced thin
  • 1 lemon, sliced thin

Instructions

  1. Peel and quarter the tomatoes.
  2. Cover the tomatoes with sugar and let stand overnight.
  3. Drain off the syrup from the tomatoes.
  4. Heat the syrup to a boil.
  5. Cook until the syrup spins a thread (232°F).
  6. Add the tomatoes, sliced orange, and lemon to the syrup.
  7. Cook over low heat until the tomatoes are transparent.
  8. Seal the hot preserves in sterilized glasses.
