- Oil a work surface, such as a countertop, marble slab, or flat baking sheet.
- Combine grated orange peel, orange juice, sugar, cinnamon, cloves, and nutmeg in a medium-sized saucepan.
- Stir until sugar is dissolved and bring the mixture to a boil over medium-high heat.
- Add the pecans a few at a time, stirring constantly to coat them evenly.
- Continue cooking until the pecans begin to lose their shine, about 2 to 3 minutes, then remove the pan from heat.
- Continue stirring until the pecans are clinging together in a mass.
- Spread the pecans on the oiled surface to cool.
- Use two forks to separate the pecans so they are not stuck together.
- Once cooled and crisp, store the pecans in a covered jar.
