Ingredients

  • 2 or 3 diced parsnips
  • salt
  • pepper
  • 8 oz Velveeta cheese

Instructions

  1. Cook the diced parsnips in water until almost tender.
  2. Remove the parsnips with a slotted spoon and place them in a greased casserole dish.
  3. Add salt and pepper to the water used for cooking, and cut the Velveeta cheese into chunks.
  4. Simmer the cheese chunks in the water until melted, then pour the cheese sauce over the parsnips.
  5. Crumble cracker crumbs or potato chips on top of the casserole.
  6. Bake in a 375°F (190°C) oven until the top is nicely browned.
