Ingredients

  • 1 1/2 cups yellow cornmeal
  • 1 cup unbleached flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups half and half
  • 3/4 cup melted cooled butter
  • 2 eggs

Instructions

  1. Combine cornmeal, flour, sugar, baking powder, and salt in a bowl; set aside.
  2. Mix together half and half, melted cooled butter, and eggs in another bowl.
  3. Stir the liquid mixture and pecans into the cornmeal mixture until just combined.
  4. Pour the batter into a well-greased 9 x 5 x 3-inch loaf pan.
  5. Bake at 375°F (190°C) for 45 minutes or until a cake tester inserted into the middle comes out clean.
  6. Cool in the pan on a cooling rack for 10 minutes.
  7. Remove from the pan and cool completely before serving.
