Ingredients

  • 4 c. peaches, chopped
  • 1/4 c. lemon juice
  • 1/2 c. chopped almonds
  • 7 c. sugar
  • 1 pouch liquid pectin

Instructions

  1. In a 6 to 8-quart pot, combine peaches, lemon juice, and chopped almonds. Heat to a rolling boil and cook for 1 minute, stirring constantly.
  2. Add sugar and liquid pectin to the mixture, stirring well to combine.
  3. Skim off foam from the top with a metal spoon.
  4. Ladle the hot jam into sterilized jars, leaving ¼-inch headspace.
  5. Cover the jars with lids and process in a boiling water bath for 5 minutes.
