- In a 6 to 8-quart pot, combine peaches, lemon juice, and chopped almonds. Heat to a rolling boil and cook for 1 minute, stirring constantly.
- Add sugar and liquid pectin to the mixture, stirring well to combine.
- Skim off foam from the top with a metal spoon.
- Ladle the hot jam into sterilized jars, leaving ¼-inch headspace.
- Cover the jars with lids and process in a boiling water bath for 5 minutes.
