Ingredients

  • 2 qt. sliced, peeled, hard, ripe peaches
  • 6 c. sugar

Instructions

  1. Combine sliced peaches and sugar; let stand for 12 to 18 hours in a cool place.
  2. Sterilize canning jars.
  3. Bring the mixture slowly to a boil, stirring frequently.
  4. Boil gently until the fruit becomes clear and the syrup thickens, about 40 minutes.
  5. As the mixture thickens, stir frequently to prevent sticking.
  6. Skim off any foam, if necessary.
  7. Pour hot preserves into hot jars, leaving a 1/4-inch headspace.
  8. Wipe jar rims and adjust lids.
  9. Process jars in a boiling water bath for 5 minutes.
