Peach-Raspberry Cobbler

Ingredients

  • 1 c. Bisquick mix
  • 2 Tbsp. sugar
  • 3 Tbsp. milk
  • 2 Tbsp. butter or margarine
  • 1/3 c. sugar
  • 2 Tbsp. cornstarch
  • dash of salt
  • 3 c. sliced peaches

Instructions

  1. In a bowl, combine Bisquick mix, milk, 2 tablespoons sugar and butter; set aside.
  2. In saucepan, blend 1/3 cup sugar, cornstarch and salt; stir in peaches and raspberries.
  3. Cook and stir until thickened and bubbly.
  4. Pour into a 1 1/2-quart casserole.
  5. Drop dough from tablespoon onto hot fruit, making 6 mounds.
  6. Sprinkle additional sugar on dough.
  7. Bake at 400° for 20 minutes, or until biscuits are done.
  8. Serve with cream if desired.
  9. Makes 6 servings.
