Peppered Pork

Ingredients

  • 2 pork tenderloins
  • 1 Tbsp. coarsely ground black pepper
  • 1/2 c. white wine
  • 1/2 c. chicken broth
  • 1/2 c. reduced fat sour cream
  • 2 tsp. country style Dijon mustard

Instructions

  1. Roll pork tenderloins in pepper to coat; place in roasting pan. Roast in a preheated 350° oven 30 to 40 minutes until cooked through.
  2. Pour fat off pan.
  3. Add wine.
  4. Place pan on burner over high heat.
  5. Cook, scraping up browned bits, 1 minute.
  6. Add broth. Cook, stirring to reduce liquid by half 10 minutes.
  7. Remove from heat.
  8. Combine sour cream and mustard.
  9. Stir into pan.
  10. Slice pork. Serve with sauce.
