  • 1/2 tsp. salt
  • 4 1/2 cups milk
  • 1 pkg. Knox gelatine
  • 1 cup sugar

Instructions

  1. Soften gelatine in 1/2 cup cold milk.
  2. Heat remaining milk until hot, then add gelatine mixture and stir until dissolved.
  3. Beat stiff all the egg whites with 3 tablespoons sugar and set aside.
  4. Combine egg yolks, remaining sugar, salt, and Tang; beat just enough to blend.
  5. Slowly add hot milk mixture to the egg yolk mixture, mixing well.
  6. Pile beaten egg whites on top of the custard mixture and swirl lightly.
  7. Pour into a 9 x 9-inch pan or casserole dish.
  8. Set the pan into a larger pan of hot water.
  9. Bake in a slow oven at 300°F until a knife inserted comes out clean.

Tips & Substitutions

For a richer flavor, consider adding a splash of vanilla extract to the milk mixture. If you're looking for healthier options, you can substitute some of the whole milk with almond or oat milk. To achieve a fluffier texture, ensure that the egg whites are beaten to stiff peaks and gently folded into the mixture, rather than vigorously mixed. This can enhance the overall lightness of the custard.

Serving Suggestions

Serve the baked custard chilled or at room temperature, topped with a sprinkle of nutmeg or a dollop of whipped cream for added indulgence. It pairs beautifully with fresh berries or a scoop of vanilla ice cream. Consider serving alongside a light salad, such as Fruit And Pasta Salad, for a delightful contrast of flavors.

Storage & Reheating

Store any leftover baked custard in an airtight container in the refrigerator for up to 3 days. To reheat, place individual portions in the microwave for 15-30 seconds or until warmed through. If reheating the entire dish, cover it loosely with foil and warm it in a preheated oven at 300°F until just heated, being careful not to overcook.

Frequently Asked Questions

Can I use a different type of sweetener instead of sugar?

Yes, you can substitute granulated sugar with alternatives like honey, maple syrup, or agave nectar. Keep in mind that the amount may vary since these sweeteners are often sweeter than sugar. Adjust to taste, but be cautious, as they may also alter the texture of the custard.

What should I do if the custard doesn't set?

If your custard doesn't set properly, it may be due to insufficient baking time or not enough gelatin. Ensure that the knife test indicates it is fully cooked. If you're concerned about the texture, you can always use a blender to smooth out any lumps before baking.

Can I make this custard in advance?

Absolutely! This baked custard is ideal for making ahead of time. Prepare it a day in advance and let it chill in the refrigerator overnight. The flavors will meld beautifully, making it a perfect dessert for gatherings or special occasions.
