Ingredients

  • 3/4 c. part skim Ricotta cheese
  • 1/4 c. minced fresh basil
  • 1/4 c. minced fresh parsley
  • 1/4 c. skim milk
  • 2 Tbsp. grated Parmesan cheese
  • 1 medium shallot, quartered
  • dash of white pepper

Instructions

  1. Combine all ingredients in container of electric blender.
  2. Top with cover. Process until smooth.
  3. Pour into bowl.
  4. Cover.
  5. Chill. Serve with spinach salad.
