Picnic Mashed Potatoes

- Preheat oven to 350°.
- In a large, heavy saucepan, place potatoes in just enough water to cover them.
- Bring water to a boil over medium-high heat.
- Cover saucepan loosely.
- Reduce heat to medium.
- Cook until potatoes are soft.
- Drain potatoes.
- Add butter or margarine, cream cheese and sour cream.
- Beat on high speed mixer until smooth.
- Salt and pepper to taste.
- Beat 2 minutes more.
- Transfer potatoes into a medium baking dish.
- Bake at 350° for 20 minutes.
- Remove from oven.
- Sprinkle lightly with paprika.
- Serve hot or cold.
