Pigs Beer Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 12 teaspoon salt
  • 12 cup chilled shortening (I prefer lard)
  • 1 (12 ounce) bottleof flat beer

Instructions

  1. Combine flour sugar and salt in a large bowl.
  2. Add the shortening or lard and cut into dry ingredients with a fork or your hands.
  3. Flat beer -- beer that has lost it's fizz -- works best!
  4. Otherwise just let the beer get to room temperature; add 1/2 to 3/4 cup to mix.
  5. Knead the dough just enough to blend -- over mixing will make it tough.
  6. Flour a flat surface and spread the dough to a one inch thickness.
  7. Cut your biscuits out.
  8. Bake at 425F for about 10 minutes or until brown.
