Pineapple-Berry Boat

Ingredients

  • 2 medium pineapples
  • 2 pt. raspberries or strawberries
  • 1/3 c. raspberry preserve
  • 3 oz. pkg. softened light cream cheese
  • 1 Tbsp. no-fat milk
  • 1/2 tsp. finely shredded lemon peel
  • 2 tsp. lemon juice
  • 1/2 c. whipping cream

Instructions

  1. Cut pineapple in half lengthwise.
  2. Using a sharp knife, cut out the pineapple meat, leaving the pineapple intact.
  3. Cut off hard core, then cut in chunks.
  4. Combine pineapple chunks and raspberries or strawberries.
  5. Mound into pineapple shells.
