Ingredients

  • 1/2 tsp grated lime peel
  • 1 1/2 Tbsp lime juice
  • 2 Tbsp honey
  • 2 Tbsp cherry brandy
  • 1 small ripe pineapple
  • 4 slices pound cake or cookies

Instructions

  1. Mix the grated lime peel, lime juice, honey, and cherry brandy together in a large bowl.
  2. Peel the pineapple, removing the skin and most of the black holes on the surface of the flesh.
  3. Stand the pineapple upright and cut it vertically into 1/4-inch slices, stopping at the core.
  4. Turn the pineapple 90° and cut again, repeating until all the flesh has been removed from the core.
  5. Stack the pineapple slices and cut them into 1 1/2-inch wide strips.
  6. Add the pineapple strips to the bowl containing the lime mixture and mix well.
  7. Allow the pineapple to macerate in the lime juice mixture for at least 1 hour.
  8. Serve with slices of pound cake or cookies.
