Pineapple Lemon Angel

- Drain the crushed pineapple, reserving the juice.
- Mix the pineapple juice with enough water to make 3 cups.
- Add sugar to the juice mixture and bring to a boil.
- Pour the hot mixture over the lemon gelatin and stir until dissolved.
- Stir in orange juice and lemon juice into the gelatin mixture.
- Fold in the whipped cream into the gelatin mixture.
- Tear the angel food cake into 1-inch pieces with forks.
- Layer half of the cake pieces into a 9 x 13-inch pan.
- Spoon half of the gelatin mixture over the cake layer.
- Repeat with remaining cake pieces and gelatin mixture, do not pack layers.
- Ensure the top layer has an irregular surface.
- Chill the assembled dessert for 24 hours.
- Cut into squares and garnish with fresh strawberries if desired.
