Pineapple-Lime Snow

Ingredients

  • 1 (20 oz.) can crushed pineapple in own juice
  • water
  • 1 (6 oz.) pkg. lime gelatin
  • 1 (8 oz.) carton Cool Whip
  • 1 (32 oz.) carton small curd cottage cheese
  • 1 (11 oz.) can mandarin oranges, drained
  • 1 1/2 c. chopped walnuts
  • 1/4 c. shredded coconut
  • mint leaves (for garnish)

Instructions

  1. Drain pineapple well, reserving syrup.
  2. Combine reserved syrup and enough water to measure 1 cup in saucepan.
  3. Heat to a boil. Add lime gelatin.
  4. Reduce heat and cook, stirring, until gelatin is thoroughly dissolved.
  5. Remove from heat.
  6. Add 1 cup cold water. Set aside and refrigerate until gelatin is consistency of egg whites.
