Ingredients

  • 1 cup chopped fresh mint
  • 1/2 cup water
  • 2 tablespoons sugar
  • 2 cups pineapple juice
  • 1/2 cup lemon juice
  • 4 cups sugar
  • 1/2 cup liquid pectin

Instructions

  1. Cover the chopped fresh mint with 1/2 cup water and 2 tablespoons sugar in a bowl.
  2. Let the mint mixture stand overnight to infuse the flavors.
  3. Strain the mint mixture into a pot, discarding the solids.
  4. Add pineapple juice, lemon juice, and 4 cups of sugar to the pot.
  5. Bring the mixture to a boil.
  6. Add 1/2 cup liquid pectin to the boiling mixture.
  7. Boil for 30 seconds (half a minute).
  8. Add green food coloring if desired.
  9. Skim off any foam or impurities.
  10. Pour the hot jelly into sterilized jars or glasses.
