Pineapple Mint Mold

Ingredients

  • 1 (20 1/2 oz.) can crushed pineapple
  • 1 envelope unflavored gelatin
  • 1 (10 oz.) jar mint jelly
  • 1 container whipping cream
  • 1 tsp. confectioners sugar
  • dash of salt

Instructions

  1. Drain pineapple; keep syrup and place in saucepan.
  2. Soften gelatin in syrup.
  3. Add jelly and dash of salt.
  4. Heat and stir until all dissolved and jelly melted.
  5. Stir in pineapple; chill until mixture is thickened and syrupy.
  6. Whip cream with sugar until stiff; fold into mixture.
  7. Spoon into mold and freeze.
  8. Let stand at room temperature 15 minutes before serving.
