Ingredients

  • 1/2 cup minute tapioca
  • 1/4 cup sugar
  • pinch of salt
  • 1 quart hot water
  • 1 cup crushed pineapple, drained

Instructions

  1. Mix the tapioca with sugar, then add the hot water and stir to combine.
  2. Cook the tapioca over a double boiler for 15 minutes, stirring frequently until thickened.
  3. Remove from heat and stir in the crushed pineapple, draining excess liquid.
  4. Garnish with a slice of whole pineapple before serving.
  5. Serve with whipped cream or ice cream if desired.
