Pineapple Pickles

Ingredients

  • 1 (29 oz.) can pineapple chunks
  • 3/4 c. cider vinegar
  • 1 c. sugar
  • 6 cloves allspice
  • 3 whole cloves
  • 1 (3-inch) stick cinnamon
  • 1 tsp. powdered coriander seed
  • dash of salt
  • 1 to 2 drops red food coloring

Instructions

  1. Drain pineapple, save 3/4 cup of syrup.
  2. Put 3/4 cup syrup and all ingredients (except pineapple chunks and coloring) in saucepan.
  3. Cook, uncovered, for 15 minutes.
  4. Add pineapple and boil briskly for 5 minutes.
  5. Remove from heat and add food coloring.
  6. Cool and pour into jar with tight fitting lid and refrigerate at least 24 hours.
  7. Serve very cold.
  8. Yields 20 servings.
