Ingredients

  • 1 gallon water
  • 1 1/2 cups Hawaiian salt
  • 7 pipinola
  • 1 cup sake kasu
  • 1 1/2 cups sugar
  • 1/2 cup vinegar
  • 2 tablespoons Mirin
  • 2 tablespoons shoyu

Instructions

  1. Peel the skin off the pipinola and cut into squares.
  2. Soak the pipinola in salted water (using 1 1/2 cups Hawaiian salt in 1 gallon water) for 1 day.
  3. Pat dry the pipinola pieces.
  4. Soak the dry pipinola into sake kasu sauce for 4 to 5 days.
  5. Rinse the sake kasu from the pipinola.
  6. Cut the pipinola into bite-sized pieces and serve.
