Ingredients

  • 6 1/3 cups water
  • 2 2/3 cups coarse cornmeal
  • 7 oz. Fontina or Gruyere cheese, thinly sliced
  • 5 oz. butter
  • salt

Instructions

  1. Bring 6 1/3 cups of water to a boil, add salt, and sprinkle in the cornmeal, stirring constantly.
  2. Cook over low heat for 40 minutes until the polenta begins to leave the sides of the saucepan.
  3. Add the sliced cheese and cook, stirring constantly, for an additional 5 minutes until melted and well incorporated.
